MTN DEW® Code Red Chipotle Salsa
Chips and salsa is possibly THE perfect snack, but you can serve this salsa over anything! We tried it over grilled shrimp.
INGREDIENTS

3 Tablespoons olive oil
¼ onion, minced
2 cloves garlic, minced
2 cans MTN DEW® CODE RED® (12oz)
¼ cup chipotle peppers in adobo sauce
1 cup fresh cherries, pitted and quartered
½ cinnamon stick
¼ teaspoon dried oregano
¼ teaspoon dried thyme
2 bay leaves
1 clove
INSTRUCTIONS
- Heat olive oil in a pan. Add the minced onion and garlic, stirring constantly until the onion is transparent.
- Add MTN DEW CODE RED and let it reduce to half.
- Add chipotle peppers and spices, letting it cook for another 5 minutes.
- Remove from heat, and blend everything until it’s nice and silky-smooth. Bring it back to the saucepan and add the cherries.
- Cook until the cherries are soft. Transfer salsa to the container and store in the refrigerator. Keep refrigerated up to three weeks. Remove bay leaf and clove before serving.
