MTN DEW® Code Red Chipotle Salsa

Chips and salsa is possibly THE perfect snack, but you can serve this salsa over anything! We tried it over grilled shrimp.

INGREDIENTS

3 Tablespoons olive oil
¼ onion, minced
2 cloves garlic, minced
2 cans MTN DEW® CODE RED® (12oz)
¼ cup chipotle peppers in adobo sauce
1 cup fresh cherries, pitted and quartered
½ cinnamon stick
¼ teaspoon dried oregano
¼ teaspoon dried thyme
2 bay leaves
1 clove

INSTRUCTIONS

  1. Heat olive oil in a pan. Add the minced onion and garlic, stirring constantly until the onion is transparent.
  2. Add MTN DEW CODE RED and let it reduce to half.
  3. Add chipotle peppers and spices, letting it cook for another 5 minutes.
  4. Remove from heat, and blend everything until it’s nice and silky-smooth. Bring it back to the saucepan and add the cherries.
  5. Cook until the cherries are soft. Transfer salsa to the container and store in the refrigerator. Keep refrigerated up to three weeks. Remove bay leaf and clove before serving.
