MTN DEW LIVEWIRE® ORANGE CHICKEN

INSTRUCTIONS
1. Cut 1 pound boneless skinless chicken thighs into equal bite sized pieces.
2. In a medium bowl season with ½ tsp fine sea salt and 1 tsp coarse black pepper.
3. Add 2 beaten medium eggs, ¼ cup potato starch and ¼ cup rice flour.
4. In a separate bowl add 1 ½ cups all-purpose flour.
5. Coat each piece of chicken in the all-purpose flour then place onto a baking sheet, leaving space in between each one.
6. Fry at 375 Fahrenheit for 3-4 minutes or until very crispy.
7. Drain on a wire rack or paper towels.
8. In a medium sized saucepan on medium high heat add 1-2 tbsp refined olive oil then heat until gently smoking.
9. Add ½ medium yellow diced onion and sauté for 3-4 minutes until golden brown and slightly softened.
10. Add 1 ¼ cup Mtn dew livewire, ½ cup fresh orange juice, ¼ cup cane sugar, 2 tbsp rice vinegar and 2 tbsp chicken stock.
11. Reduce heat to medium and simmer for 10 minutes or until reduced by half.
12. Thicken sauce with a slurry consisting of 1 tbsp potato starch and 1 tbsp water. Stir until smooth.
13. Taste for seasoning adding salt and pepper as necessary.
14. Toss the beautifully fried chicken in the sauce with a ton of cilantro leaves.
15. Plate on top of rice and garnish with more cilantro and thinly sliced green onion tops (maybe sesame seeds, course black pepper, and/or flaky sea salt)
