MTN DEW® CHICKEN PICCATA

INGREDIENTS

2 lbs chicken breasts (halved horizontally pounded to ¼” thick)
      
      Salt
      
      Black Pepper
      
      2 t Garlic powder
      
      ½ C Self-Rising Flour for dredging
      
      1 t Rosemary seasoning
      
      10 T Butter, cut into pieces, divided (save 4 T for sauce)
      
      4 T Olive oil, divided
      
      ½ C White Onion, diced
      
      1 T Garlic, minced
      
      2 C Mountain Dew
      
      Rosemary sprigs
      
      1 t Chicken bouillon
      
      INSTRUCTIONS
- Season the chicken with salt and pepper on both sides. Place the flour (seasoned with Garlic powder & Rosemary) on a plate. Dredge the chicken in the flour and shake off any excess. Discard the flour when finished dredging.
- Heat 3 tablespoons butter and 2 tablespoons oil in a large cast-iron skillet over medium-high until the butter has melted.
- Working in batches, add the chicken and sauté until golden brown, about 2 ½ - 3 minutes per side, until cooked through, then set aside. (Add more butter and olive oil as needed for each batch.)
- Add the onion to the pan drippings and sauté until translucent and fragrant, about 3-4 minutes. Add minced garlic rosemary springs & sauté until garlic is lightly toasted.
- Add the Mt Dew and simmer (stirring frequently) until reduced by half
- Reduce heat to low, then stir in the remaining 4 tablespoons butter, chicken bouillon, and salt to taste.
- Serve the chicken with the piccata sauce poured over the top of the pan-fried chicken
