MTN DEW® CHICKEN PICCATA

INGREDIENTS

2 lbs chicken breasts (halved horizontally pounded to ¼” thick)
Salt
Black Pepper
2 t Garlic powder
½ C Self-Rising Flour for dredging
1 t Rosemary seasoning
10 T Butter, cut into pieces, divided (save 4 T for sauce)
4 T Olive oil, divided
½ C White Onion, diced
1 T Garlic, minced
2 C Mountain Dew
Rosemary sprigs
1 t Chicken bouillon

INSTRUCTIONS

  1. Season the chicken with salt and pepper on both sides. Place the flour (seasoned with Garlic powder & Rosemary) on a plate. Dredge the chicken in the flour and shake off any excess. Discard the flour when finished dredging.
  2. Heat 3 tablespoons butter and 2 tablespoons oil in a large cast-iron skillet over medium-high until the butter has melted.
  3. Working in batches, add the chicken and sauté until golden brown, about 2 ½ - 3 minutes per side, until cooked through, then set aside. (Add more butter and olive oil as needed for each batch.)
  4. Add the onion to the pan drippings and sauté until translucent and fragrant, about 3-4 minutes. Add minced garlic rosemary springs & sauté until garlic is lightly toasted.
  5. Add the Mt Dew and simmer (stirring frequently) until reduced by half
  6. Reduce heat to low, then stir in the remaining 4 tablespoons butter, chicken bouillon, and salt to taste.
  7. Serve the chicken with the piccata sauce poured over the top of the pan-fried chicken
